White Chocolate Madamia Nut Cookies & Peanut Butter Kisses

Well, on the edge of consuming so much sugar that I become diabetic (can you do that?), get sick and die.  I have mentioned before that I love to bake.  If you have been reading the blog for a few years, you may recall the great rainbow cake experience of 2010.  It seems however that moving to Austin has pushed my baking bug into overdrive.  This is somewhat unfortunate as I see considerably less people in my day to day life and therefore have no one to eat all of these confections.  So guess who eats most of them...yeah, that's right...this girl.  Sadly I end up tossing a good deal of baked goodies in the trash to 1. save my waistline from not being able to fit into the wedding gown I have already ordered and 2. because after a week of sitting on the counter, I'm not sure it's safe to be eating frosted goodies.

I have however realized that even if my efforts are not all gobbled up, my love of baking grows stronger more and more every year.  Baking is my go to activity when I'm super busy with work and need a break.  It forces me to slow down, take my time following directions and I get to clean...which always makes me feel better.   The best part is that when its all done, I get a yummy treat.  With all that goes wrong in the design process and the continuous need to obtain new knowledge to run a website and a business, its wonderful to know that you still can take a few simple ingredients from the pantry and create something so wonderful.

Gingerbread Cupcakes with Butter Cream Frosting

So today I have decided to let myself live a little on the edge and bake to my hearts content.  I started trolling google for awesome baking blogs to add to my reader and inspire me.  There is one blog I read that occasionally features a cupcake recipe.  I have jumped up from my computer mid post on almost every single one to bake them...even the Vegan recipe which tasted kind of like water but were surprisingly moist.  It's actually that impulse that has held me back from reading blogs dealing exclusively with baking...but I'm not holding back anymore!!  I already have my eye on making red velvet cake balls covered in white chocolate for Valentine's Day...yum!

There's something exceptionally cathartic about baking when I'm stressed out.  You take a bunch of very boring in their own right ingredients (which I store in pretty jars so I'll admit that its kind of exciting to get out the stuff to begin with) follow some instructions, mix them up in a bowl, stick them in the oven and POW! You have awesomeness and pretty instant and spectacular results.  I was having a low morning.  Adam is away again (I have hardly seen him this month), I'm stressed from the online holiday craziness, the shows I have coming up and all the usual December brouhaha.  I also have been working on some big plans for next year that I'll talk about soon (but its exciting!) that are insanely stressful, no matter how joyous.  Add to that the extreme stress of traveling back east for Christmas and having to make sure I see everyone and everything that all of that entails and...well it makes for a bit overwhelmedness.  Yes, I know that's not a word.

So this morning when I saw this post on Rock Star Diaries about Gingerbread Cupcakes, I ran for the kitchen within oh...5 seconds.  Fortunately, my Nana's Gingersnaps are my specialty and a similar recipe, so I had everything needed on hand.  The recipe is quite yummy, although I made classic Buttercream frosting instead because anytime I make something else, I'm just sad its not that.  Admittedly I was really excited for an excuse to use my new silicone mini cupcake tray that I bought last winter at the end of baking season and never got around to using.

The only problem is that I now have all of these cupcakes...so far I have only had one two...but they are only two bite cupcakes so that could change rapidly...

I'm not really a breakfast person.  I would prefer to just have a cup of coffee, which I do usually have first...but I need to eat something within the first hour I'm awake or I get all shaky.  The dilemma is what can I eat that's small, gives me energy and is quick to make?  For years I would make the same breakfast everyday for a few months and then get bored and move on the the next.  I however read recently that it's better for you to mix it up and not repeat the same food multiple days in a row.  So recently I have been alternating a Wasa cracker with natural chunky peanut butter and local honey with a small bowl of cereal of almond milk.  Then this week I was craving egg salad so I hard boiled a bunch off eggs and kept a few in the fridge.  Now my new favorite thing is 2 hard boiled eggs with a sprinkle of Jane's Crazy Mixed Up Salt (the BEST stuff on earth!) So yummy!  But I 'm feeling like I want a new mini meal to throw in the mix...any suggestions?

Macarons_06It has been months and months since I have enjoyed scrumptiously yummy Macarons.  That is just cruel to treat myself that way!  I did a bit of sleuthing of where to find the best Macarons in Austin and have narrowed in down to two places: la boite on South Lamar and La Patisserie on South Congress (I live in South Austin, 78704 so my search was a bit location biased for that reason.)

Have any of you been to either eatery or have any other recommendations of where to get the yummiest Macarons?  I think tomorrow afternoon I'll take a field trip and fill my craving...I can't wait!

This past weekend Adam was visiting and as he had never been to NYC and in a few short weeks, I will no longer be a resident of the Empire State, we decided to spend a long weekend in Manhattan.  Without planning out anything before hand, we ended up fitting in a ton of stuff and I felt like I gave the big apple a proper farewell and at the same time giving Adam a proper introduction!

Friday night we checked into the Hudson in mid town and met up with Adams childhood friend Lindsey and my friend Matthew who I went to school with at Syracuse for dinner at Freemans Alley in the lower East side.  After an awesome dinner, Adam, Matthew and I ventured off into the night to a pub where we ran into another classmate of Matthew's from SU...how weird is that?  The boys were in the mood for some Karaoke, so we headed to 2nd street where we found both Karaoke and following an hour or so of questionable singing, a bar that the three of us lasted about two minutes in.   At this point it was 2 am and where else would we have gone, but Times Square!  We ate hot dogs under neon lights and then called it a night.

NY_ZooSaturday we had brunch with my sister Gillian and her boyfriend Javier and then headed off to the Central Park Zoo.  It was the perfect size to wander around and not get overwhelmed and so much fun.  The boys then wanted to check out the big Nike store, and Gilly and I perused Chanel and Miu Miu where I had no desire to look at Fall clothes as it was 95 degrees out.

NY_DinnerAfter an afternoon out and about, we dressed for dinner and headed to The Porter House in the Time Warner building for oysters, the most delicious steak on the planet and fantastic scotch.  I learned that I now prefer steak so rare that I should order "extra rare" so its not charred black and blue style.  Mouth watering awesomeness is what it is.

NY_ShakeI though of going to Serendipity for frozen hot chocolates, but we decided to go visit Gilly at the Shake Shack she manages and have a delicious shake for dessert instead.  We also had Gilly there with us to take dorky photos of us...love it.

NY_YankeesvvSunday we went to a Yankees Game with Gilly and Jav, and it was awesome, they won...we had cotton candy, beer and hot dogs.  It was perfect.

NY_Yankees2We meant to go home on Sunday night, but decided to stay on until Monday and I was so happy that we did!  Jav lives in the Financial District so after the game we visited Ground Zero and wandered down by the water where we could see Lady Liberty off in the distance.

NY_LadyLibertyWhile deciding on dinner, the four of us played cards and had cocktails on Javs deck which was like a little jewel filled with flowers and teak deck furniture amid the mass of concrete around of us.

After dinner, Adam and I headed back to our hotel and finished the weekend off with fantastic live blues at Terra Blues on Bleecker Street.  We sat in candle light with a great selection of scotch and even managed to get a dance in before we called it a night.

I know I've told you that I only allow myself candy on the 5 candy high holidays of the year (valentines day, my birthday, easter, halloween & christmas) but I do allow one exception.  Candied Ginger.  I can have it in the house and exhibit enough self control to not devour it constantly, but if I do indulge in one blissful little piece, well let's just say that I'll be recycling the container in the morning.

It's probably no surprise that my signature cookie is the ginger snap or that after recently discovering that Carr's (known for table water crackers) makes a divine lemon ginger cookie that I made everyone I know try them.  I also when through a phase of eating Dundee's ginger preserves on basically everything, but the fact that I was eating a loaf of bread with the preserves made me stop that nasty habit quickly.  You can imagine that by this point, I was pertty sure I was aware of all ginger treats.  And then I saw it.

Ginger Syrup...I was innocently wandering around the little gift shop attached to the Harney & Sons tasting room in Millerton, waiting to have lunch with my friend Julia and there it was, unassumingly glowing all pretty, with a Ginger People Ginger dude grinning down at me.  I was so excited that after I shared what I saw with Julia, she made sure I bought some before we left.

I very impressively held off opening it for a taste last night and am waiting for the waffle maker to heat up so I can try it out in style!  Although once opened, its fair game...it seems to be divine in tea, soda, brandy, in martinis, on chicken, to glaze carrots...and well, I'm sure just simply on a spoon.  This makes me so happy!!  Today is a good day.

 

 

As far back as I can remember, my mom always went out to get the paper and coffee first thing in the morning.  I think it became a way of getting peace and quite from 4 loud daughters and countless pets running under foot.  Although I do remember this ritual long before all of my younger sisters were born.  I became a daily coffee drinker when I was in prep school.  Long stints in painting studios will do that to a girl.  It was a convenient habit to pick up…it was always right there in the dining hall just waiting to poured and so lovely to sip while working in the studio.

When I was in college I never made coffee myself, we had Dunkin Donuts all over campus and a huge cup could be mine with a simple swipe of my student id card.  After school I began living with my now ex husband and he used to prep the little drip machine we had before he left in the mornings so I just had to start it when I got up.  It was very sweet of him to do this and it made my coffee drinking almost perfect, but you see, I’m a slow coffee drinker.  I carry around a cup with me at all times, but I only drink 2-3 cups a day.  I don’t mind it cold, and I actually add cold water (instead of milk) when I prepare a cup.  I however abhor burnt coffee.  Working in my studio at home meant that it would take me all day to drink that one pot.  By afternoon, when I was ready for my third cup, it was undrinkable…but seemed like a waste to make a fresh pot for just one cup.

My step-mother heard my woes and gave me a little percolator at some point that did indeed help the burnt part a bit, and I was happy; especially as I was married at that point and continued to just have to plug in when I woke up.  Those were lovely days, until the second percolator that I bought to replace the first when it wore out stopped working.  I started using a drip again as I had one lying around and, well, convenience trumped taste.  Then one day I had a light bulb moment and got an insulated carafe.  I simply transferred the fresh brewed pot into the carafe and presto!  Warm coffee that was not burnt could be mine all day…and this made me ridiculously happy!!

After the divorce, I still used this method until the drip machine broke and I happened to have on hand a French Press that a friend had just given me as a gift.  Voila…a new love was formed!  Well, except I ended up breaking the French Press, but no worries, I ordered a new one up instantly.  A friend of mine did break the new carafe a couple of months ago, but I was due for a new one anyway and French Press parts are easy to reorder…which was excellent news as I seem to have really bad luck keeping a coffee maker in working order.

Somewhere in the midst of all of this, my mom bought me a mug.  She asked permission first…and I assured it was not only ok, but that I loved it.  It’s the perfect size, white ceramic with ART SLUT in black print around it.  It’s the only mug I drink coffee with and that’s all I use it for…I actually drink tea in different mugs.   I have created the most ritualistic routine to my morning coffee consumption.  Is this weird?  Do any of you do something like this?

Well even if this is all just a neurosis spinning out of control, it’s not over yet.  We are just getting to the root of the evil…the bean itself.  I have been grinding my own for some time now, I’m pretty sure since I started living on my own again 6 years ago.  My ex husband was nice enough to prep the coffee, but didn’t want to take the time to grind it.  Ah, his loss, fresh ground coffee is awesome.  I’ve flirted with different brands and roasts, and I’m pretty simply…I light a lighter roast…perhaps a breakfast blend.  Nothing too extreme and I’m not so obsessed that I travel far to get specialty beans or order them online.  I need to be able to buy them at the local stores.  I’ve tried fair trade, organic and big box brands.  I’m not so much of a connoisseur that I can really tell the difference.  But I am a label whore.  (Label Whore, Art Slut…great impression I’m making today!)  So when I realized that the master of awesome Italian caffeine packaging design, Illy, sold whole coffee beans and not just for espresso, I squealed with delight!  Compared to fair trade, its not so expensive and those tins, oh those tins!, they are divine to look at.  I heart them big time.  The sassy red lids make me swoon.  I use the empty tins in my painting studio as storage.  I keep it on my counter…right next to the grinder.  It looks THAT good.

You know what the worst part is?  That I’m drinking coffee right now as I type, and I still want to run over and make another batch after writing about it.  Addiction’s a bitch.
